Stir-fried Duck Breast with Bitter Gourd

Prepare the raw materials.

Add an appropriate amount of salt to the bitter gourd to pickle it to get the moisture out.

After the duck breast is sliced, add appropriate amount of salt, starch, light soy sauce and cooking wine, mix well and marinate.

Heat the pan with cool oil, add the marinated duck breast and stir fry.

Stir-fry until the duck breast changes color, then add red pepper rings and garlic slices to stir-fry.

After sauteing, add bitter gourd slices squeezed out of water and stir fry.

Stir-fry until it is ripe, add appropriate amount of salt to taste, stir-fry evenly, and put it on the plate.

Tips:
1. Marinate the duck breast with salt and other seasonings in advance.
2. After slicing bitter gourd, add appropriate amount of salt to marinate.
3. Adding red pepper can not only increase the color, but also reduce the bitterness.
