Stir-fried Eel

Debone and shred the eel, add cooking wine and starch to sizing.

Shred green and red peppers and onions for later use.
3.
Put enough oil in the pot to heat up, and pour in the eel silky oil.
4.
Remove all the eel shreds and drain the oil.
5.
Leave the ginger in the bottom of the pot and sauté until fragrant.
6.
Pour in shredded green and red pepper and shredded onion and stir fry until fragrant.
7.
Pour in the oily eel shreds and stir fry.
8.
Add cooking wine, salt, soy sauce, chicken essence and stir-fry evenly.
Tips:
This dish needs to be hot and fast.
