Stir-fried Eel Slices with Green Peppers

The eel is divided into eel slices, the internal organs are removed and cleaned, and then the mucus on the outside of the eel slices is thoroughly washed with salt and flour.

Marinate the cleaned eel slices with cooking wine, salt and 1 teaspoon of rice flour for 15 minutes.

Tips:
The mucus on the outside of the eel is very difficult to clean. First, use 1 teaspoon of salt to catch the eel and rinse off the mucus. Add 1 teaspoon of flour to make it evenly, rinse it off again, and finally add 1 teaspoon of salt. Rinse it off, so that the mucus can be washed out after repeated several times.
