Stir-fried Egg with Shallot and Bamboo Shoots

Peel off the shells of winter bamboo shoots, wash them, and cut the heads of winter bamboo shoots into small pieces for later use

Clean the shallots and cut into small pieces for later use

Add cooking wine to the egg, add some salt

Add bamboo shoots, stir well, add more oil to the pan

When the oil is 80% hot, pour in the egg mixture, evenly sprinkle all the chopped green onions on top, and fry until golden brown

Flip and fry again, then serve
