Stir-fried Escargot

The escargot meat is ready. My escargot meat is frozen and needs to be defrosted at room temperature in advance;

Put the snail meat in a small basin, put some water to moisten it, and then rub it with salt for a while, wash with clean water, and wash all the dirt on the snail meat. This step requires a little patience, one by one. wash;

The cleaned escargot meat is ready for use;

Boil water in a pot. After the water is boiled, pour the snail meat and cook for about 1 minute;

Remove the boiled escargot meat, rinse with warm water, and drain for later use;

The garlic is peeled, the green peppers are peeled, and the carrots are peeled; because my family can’t eat spicy, I chose green peppers that are not too spicy, with a lot of garlic. If you like spicy ones, you can put some dried red peppers or Replace the green peppers with spicy ones;

Cut the green peppers, carrots, and garlic separately; there is also a green onion, which is also cut into chopped green onions, forgot to take pictures;

Heat up a wok, add oil, add garlic slices, chopped green onion and fry until fragrant, then add carrots and stir fry;

Put the snail meat in, stir fry quickly on high heat;

Pour in the right amount of light soy sauce and a little white wine, continue to stir fry; you can also put cooking wine or rice wine, because my family does not have these two, so I poured some white wine in;

Add the cut green peppers, season with some salt, and continue to fry for a few more times.

This dish is ready to be fried. Turn off the heat, serve and serve.

I haven't eaten this dish for many years. Steaming a pot of rice makes this dish super delicious. Although the dish I stir-fried is not spicy, it tastes very good. Putting a lot of garlic can also stimulate the taste buds.
