Stir Fried Fresh Squid

1. The fresh squid is cleaned and cut with a flower knife.

2. Shred the onion, cut the red pepper into circles, slice the ginger, smash the sand ginger, and cut the green onion into sections.

3. Add water to the pot and bring to a boil. Add ginger slices and fresh squid to blanch in water for two minutes to pick up.

4. Boil the spice heads with fierce oil, pour in the blanched squid, drip a few drops of cooking wine along the side of the pan, and stir-fry for about two minutes.

5. Finally, add the shallots and stir-fry evenly, and out of the pan.

Tips:

When the fresh squid is fried, the heat and the time must be controlled just right, otherwise the fried squid will be old if one minute is longer, and the uncooked if the fried squid is less than one minute.
