Stir-fried Green Beans with Salted Egg

broad bean.

Peeled green peas.
3.
Boiled salted eggs.
4.
Cut across.
5.
Draw a cross knife to separate from the shell.

Stir-fried watercress with oil. To 80% ripe.

Add sugar, salted eggs, and a few drops of water to melt the yolk.
8.
Turn off the heat and stir fry until the egg yolk sticks to the watercress.
9.
Plate.

The salted egg yolk sticks to the watercress and tastes different.
Tips:
Use cooked salted eggs with oil. The yolk should be broken to stick to the watercress. Never add a lot of water.
