Stir-fried Mushroom and Egg with Crab Flavor with Leek
1.
Prepare the ingredients, clean the crab-flavored mushrooms and chives separately;
2.
Cut the cleaned leeks into 3.5cm-long sections;
3.
Knock the eggs into a clean small bowl, use chopsticks or egg whipping to mix into a uniform egg mixture, add 1 spoonful of water during the mixing process, so that the scrambled eggs will be more tender and smooth;
4.
Turn on the gas stove, pour in the right amount of cooking oil after the pot is heated, and wait for the oil to heat up to 60% to 70% hot, then pour in the egg liquid, and stir the egg liquid quickly with chopsticks or spatula after entering the pot;
5.
Fry until the surface of the egg turns golden brown. If you like to eat eggs with a tender texture, you can shorten the time for stir-frying and then set aside;
6.
Put the crab-flavored mushrooms in a frying pan with fried eggs and stir-fry slowly. Stir-fry the water in the crab-flavored mushrooms is more delicious;
7.
Stir-fry until the crab-flavored mushrooms become soft and take them out for later use. Stir-fry can remove the moisture in the crab-flavored mushrooms;
8.
Pour a little cooking oil into the pot again, wait for the oil to heat up, and then add the crab-flavored mushrooms that have been stir-fried in advance and stir-fry quickly;
9.
Stir-fry for about half a minute, then add the eggs and chives that have been fried in advance;
10.
Stir fry until the leek slightly changes color, add the salt prepared in advance, stir evenly, and then turn off the heat and take it out of the pot.
Tips:
1. Leeks, eggs, and crab-flavored mushrooms do not absorb salt, so the amount of salt should not be too much.
2. The leeks are easy to cook. It is recommended to stir fry quickly after being in the pot. After a long time, it is not only easy to produce water, but also tastes bad.
