Stir-fried Pork Belly

Pork belly blanching and preservation: Put the whole pork belly into a pot with cold water, add more ginger slices and cooking wine to boil, skim the foam and continue to cook for 10 minutes! Take out cold water, rinse and drain, and cut into small strips! If you want to save it, it’s best to wash it thoroughly, cook it in the same way, cut into strips, dry the water and put it in a fresh-keeping bag for refrigeration! Try to eat as early as possible! After all, things are not so good after a long period of refrigeration!

Tips:
1. Fried pork belly must be fast, and the time must be short to be crispy and delicious! But the premise is to be cooked haha...so blanching is very important, not only to taste, but also to make him almost cooked...
2. If the taste is unacceptable at all, add some white wine, vinegar, salt, soy sauce to him before blanching, marinate for a few minutes and then wash it off, and then blanch it again! I didn't find it bothersome! And when it was washed, it was already very clean, and the smell was almost gone! Basically no smell!
