Stir-fried Pork Liver with Peppers and Carrots
1.
A large piece of pig liver, broken down into smaller strips; you can leave it alone. After washing, you can cut it and the knife will slip. If you mind, wash it and wipe it dry with kitchen paper.
2.
Cut into very thin slices, because after heating, the liver slices will shrink and become a little thicker
3.
Wash the cut pork liver slices with clean water two or three times, gently knead with your hands to remove excess residue and toxins, then mix well with a little salt, a teaspoon of starch, and cooking wine, and marinate for about 15 minutes
4.
When marinating the liver slices, prepare the side dishes; a hot pepper and a carrot, clean, and scrape off the outer skin of the carrot
5.
Remove the stems and seeds of the peppers, and cut them into elephant eye pieces. The carrots are also cut into elephant eye pieces about the size of the pepper pieces.
6.
Garlic smashed and finely chopped
7.
Pour a little oil in the wok, and stir-fry the carrot slices for half a minute
8.
Put the hot pepper pieces into the pot and stir fry a few times, sprinkle a little salt to taste, then set aside and set aside
9.
Pour an appropriate amount of oil into the pot, which can be slightly more. After the oil is hot, pour the liver slices into the pot and quickly scatter them with a shovel.
10.
After the liver is completely discolored, pour a little soy sauce to color, because a little salt has been put in the marinating, so here is a discretionary decision whether to add more salt
11.
Stir-fry until the liver is colored, pour the cooked carrot slices and hot pepper pieces back into the pot, stir-fry a few times, then pour in the minced garlic, mix well and turn off the heat
12.
So fragrant
Tips:
The coup for removing fishy liver is to wash the cut liver slices several times with clean water, and just gently rub it with your hands. Don't use too much force. The liver slices treated in this way not only reduce toxins, but also make the fried liver slices clean; the side dishes inside can be changed according to taste.
