Stir-fried Pork with Garlic
1.
Prepare the required ingredients and wash them separately for later use. Use scissors or a knife to cut off the older part of the bottom of the garlic yellow;
2.
Cut the yellow garlic into 5cm-long sections;
3.
Shred the lean meat into a bowl, add oyster sauce, light soy sauce, starch, pepper and a little water, stir evenly to taste;
4.
Turn on the gas stove, add an appropriate amount of cooking oil after the pot is heated, and then add the sliced millet pepper to low heat and stir fry slowly;
5.
After frying the flavor, add the lean meat mixed with seasonings and quickly stir fry over high heat;
6.
After about 15 seconds of frying, the surface of the meat starts to change color;
7.
Add the garlic yellow that was cut in advance and stir fry together;
8.
Stir-fry for about 10 seconds, add a little salt to taste, turn off the heat and get out of the pot when it tastes good;
Tips:
1. If you don't have oyster sauce at home, you don't need to add it. Appropriately increase the amount of starch and salt. Adding oyster sauce can help tenderize meat and improve freshness;
2. Oyster sauce has a salty taste, so reduce the amount of salt during frying;
3. Garlic yellow is easy to cook. When the meat is fried to about five mature, adding garlic yellow together will not affect the taste of the meat. If the side dishes are not easy to cook, it is recommended that the meat is cooked first, and wait until the side dishes are fried to seven or eight. When mature, add it to the pot and stir fry together;
4. The garlic yellow will become soft after being fried, and it will not taste good, so it should be fried quickly;
