Stir-fried Pork with Water Spinach

Prepare water spinach stems, we usually buy the slightly old water spinach.

A moderate amount of lean meat, cut it well, add salt, soy sauce, and sweet potato powder to marinate for about 5-10 minutes to make the meat taste more tender.

Cut the washed water spinach into pieces, not too long, just cut it to serve with rice.

Chop pepper, ginger, and garlic separately. I use ordinary chili peppers, which are slightly spicy. If you like it, you can put some chili or dried chili.

Cut the garlic sprouts for later use, or leave them alone.

When the preparations are ready, start to stir-fry the garlic in hot oil, stir-fry the meat, then add ginger and chili in turn, because the spinach stalks are tender and easier to cook, so they are put in the end.

The meat and chili are cooked to a certain extent, stir fry with water spinach stalks, add salt and soy sauce, because they are not used to seasoning, so MSG is not added. Stir-fry until the stalks start to change color, you can add some clean water to simmer.

After the water is finished, add the garlic sprouts and stir fry to get out of the pan. The whole process from pan to pan is about 5-7.

Tips:
Vegetable stems should not be fried for too long, otherwise they will not taste good when they are old.
