Stir-fried Potato Chips

The potatoes are peeled, washed, cut into thick strips, washed repeatedly to remove the surface starch, and then soaked in clean water.

Cut celery into sections, cut carrots into thick strips, and tear off the soaked fungus.

Heat oil in a pot and sauté the scallions and ginger.

Add potato chips and sauté over medium heat.

Stir until the surface of the potatoes is slightly browned, add the carrots, let the carrots sit in the fat, and stir-fry for another minute.

Add celery and fungus, stir fry until the potatoes can be easily shoveled off with a shovel.
7.
Season with salt.

Add a little crushed black pepper.
9.
Stir-fry evenly.
