Stir-fried Rape with Hericium

The Hericium erinaceus is soaked in warm water of 30-40°C, then repeatedly remove the dried water, and then change the water to remove the bitter taste of the Hericium erinaceus. Hericium can be torn into small pieces after soaking soft.

The processed Hericium edodes is then steamed in a boiling water pot for 1 hour.

Wash the rapeseed and cut into sections, slice the green onion.

Heat water in a wok and add sliced green onions.

Add hericium edodes and stir fry.

Add the rapeseed and stir fry, add light soy sauce, oyster sauce and sugar in the middle.

Stir-fry the rapeseed section.

Tips:
Change the water at least 5 or 6 times for Hericium erinaceus.
