Stir-fried Rice Cake with Black Truffle Cheese
1.
First we review the material.
2.
Heat a pot on medium heat and add a little oil.
3.
Pour in the mushrooms and stir fry for 1 minute, adding salt and black pepper in the meantime.
4.
Add the nian gao crust and continue to fry for 30 seconds.
5.
Slice the fish tofu and add it, and pour in 200 ml of chicken broth.
6.
Boil the chicken broth over high heat until the chicken soup boils, turn to medium heat, cover the pot and simmer for 10-15 minutes (depending on the water absorption of the rice cake and personal preference for the taste of the rice cake). But please pay close attention to the situation in the pot and don't let the chicken soup dry out! During the period, the moisture becomes less, so pour in the remaining chicken broth and an appropriate amount of white wine.
7.
After trying the rice cakes to meet the requirements, bring the moisture to the level shown in the picture, turn off the heat and pour the cheese, and use the remaining temperature in the pot to melt it.
8.
Finally, you can add the prepared chopped coriander and black truffle sauce.
9.
Finally, let's enjoy the brushed cheese rice cake in the pot.
Tips:
1. The structure of the mushroom is like a sponge. It already has a certain amount of water in it. If it is washed with water, the water in the mushroom body will be diluted and the aroma of the mushroom will be taken away a lot. Therefore, in the West, mushrooms are not washed. If there is dust, just wipe it off with a damp cloth.
2. Nian Gao, everyone has different requirements for its taste. My mother and I have a disagreement on this issue. If you use rice cake slices or rice cake strips that are relatively difficult to cook, you can use boiling water in a pot to pre-cook the rice cakes.
3. Because each person chooses different chicken soup, the saltiness may be different. Therefore, during the cooking process, salt should be added in batches and taste is added. In addition, Parmesan cheese is quite salty, so don’t add too much salt
4. For dishes with thick sauce such as cheese or curry, pour a bowl of water into the pot immediately after copying the dishes, so that you can easily wash the dishes after eating.
5. For coriander, if you don't have Italian parsley, you can use Chinese coriander.
6. Some people will also ask: What should I do if I can't finish a meal? My answer is "two meals" [Xiao Yueyue's expression can be seen here]. Speaking of seriousness, I do not recommend that you use a microwave to reheat the rice cakes, as this will make the rice cakes too dry. I suggest that you can use a steamer to reheat, or use about 100-150ml of chicken broth to re-simmer.
7. Cheese can be added according to your own preferences.
