Stir-fried Rice Noodles with Shredded Pork

Add Jiangxi rice noodles to boiling water, cover and soak for two or three hours;

Prepare other side dishes: shredded pork, peanut sprouts, carrot shreds, mushroom slices and shallots;

Add appropriate amount of salt, starch and cooking wine to the shredded pork, pick it up and marinate it;

Heat up the pan, add a little oil, add the shredded pork and stir fry;

Stir-fry shredded pork and stir-fry with shredded carrots;

Stir fry until the carrot shreds are slightly soft, and when there is red oil, add peanut sprouts and mushroom slices and continue to fry;

Add the soaked vermicelli and stir fry a few more times;

Pour a little broth;

Boil it for two minutes, then add salt and pepper to taste;

Tips:
1. Soak Jiangxi rice noodles in boiling water for two or three hours before use; if you don’t have time, you can add water to boil for six or seven minutes, then simmer for ten minutes;
2. Add salt to the shredded pork in advance to add a bit of flavor; the ingredients are what everyone likes, and you can match them at will, but it is best to have different colors;
3 The rice noodles may be a bit dry when fried. You can add some broth to make the fried rice noodles have a softer texture and the rice noodles that have absorbed the soup will be more flavorful, but be careful not to add too much, or it will become a soup noodle.
