Stir-fried River Prawns

Shrimp 250g

Shallot, ginger, garlic, cucumber, egg

Cut the shrimp from the back, remove the shrimp thread, and wash

Add eggs, water starch, salt, pepper, baking soda and marinate for ten minutes

Finely chop green onion, ginger and garlic, remove the flesh and slice the cucumber and set aside

Boil water in a pot, blanch the marinated shrimps in the pot

Take out the shrimps and shower for later use

Add oil to the wok and sauté the shallots, ginger, and minced garlic

Add cucumber slices and fry

Add blanched shrimp and stir fry

Add salt to taste

Stir fry for another minute and then out of the pan
Tips:
1. The longer the shrimp is marinated, the greater the expansion and the more elastic the meat;
2. It is best to blanch the shrimp. If it is inconvenient at home, you can choose to blanch it.
