Stir-fried Sanding

Eggplant, ham, dried white incense, shiitake mushrooms, diced,

Boil water in a pot, blanch the diced eggplants, and drain the water slightly.

Heat oil in a pan, add in dried fragrant dices, shiitake mushrooms, and diced eggplants. Add salt and stir fry evenly.

Add diced ham and continue to stir fry. (Because the ham is salted, you must put the salt in the last step before frying the ham, this must be remembered, otherwise the ham will be salty)

Add light soy sauce, 1 tablespoon of spicy and crispy, and 1 tablespoon of Haidilao hot pot base, continue to fry until cooked, turn off the heat.
Tips:
Fried eggplant requires too much oil, in order to reduce the oil intake, you can blanch it first. The fried eggplant is easy to cook and does not require a lot of oil.
The chopped green onion must be added before turning off the heat, and just mix it with the remaining temperature in the pot. This green onion has the strongest flavor and the color can be kept green.
