Stir-fried Shanghai Green with Mushrooms

Prepare ingredients: Shanghai green, green onion, ginger and garlic, shiitake mushrooms.

Wash the Shanghai green, cut into sections, and slice the shiitake mushrooms.

Shanghai Green is blanched in a pot of boiling water (Some people say, are you doing this too much? In fact, blanching has its advantages: one is that it can kill harmful bacteria in pesticides through high temperature. The other is that it can reduce the content of folic acid. After blanching, it is easier to blend with the aroma of shiitake mushrooms), this is what my company canteen master told me.

Raise the pot and burn the oil.

Saute the shallots, ginger and minced garlic.

Pour the shiitake mushroom slices and stir fry until fragrant.

Then pour in Shanghai Green and stir fry.
