Stir-fried Shredded Pork with Dried Mushrooms

1. 1. Mix the shredded pork with ginger, garlic, pepper, salt, cornstarch and marinate for a while.

2. 2. Soak the dried mushrooms in hot water for 10 hours.

3. 3. Heat the pot, pour the oil, add the marinated shredded pork, green pepper, red pepper, dried chili, and dark soy sauce (a little) after the oil is hot, stir-fry until half-ripe, set aside for later use.

4. 4. Fry the dried mushrooms with the remaining oil in the pot, add some salt according to the taste, and stir well. Add appropriate amount of water, cover the pot and simmer until the dried mushrooms are moderately soft and hard, pour in the fried shredded pork and stir-fry evenly before serving.
