Stir-fried Shredded Potatoes with Celery

Remove the leaves and wash the celery, the dosage is shown in the figure

Peel, wash and shred potatoes. Because it is fried with celery, the potato shreds should be slightly wider. Soak in clean water and set aside.

Cut green onion and ginger slices.

Turn on high heat, add water to the pot and boil, blanch the celery for 2-3 minutes. Put the removed celery into cold water immediately and repeat the water several times so that the celery will maintain its beautiful color. Then use the water for blanching the celery just now to cut the potato shreds until they are half cooked. Take them out and soak them in cold water.

Heat the pan with cold oil, add the chopped green onion and ginger slices to fry for a nice aroma, pour in the celery and stir fry.

Stir-fry celery for 2-3 minutes, pour shredded potatoes and continue to stir fry.

Stir-fry the vegetables until they are fully cooked, add an appropriate amount of salt, stir-fry a few more times, and transfer them out of the pan.
