Stir-fried Skin Dregs with Garlic
1.
Prepare materials.
2.
Cut the dregs into thin slices.
3.
Shred the green onions and mince the garlic cloves.
4.
After the oil is hot in the pan, add the pepper and star anise to taste the aroma, then remove and discard.
5.
Put in the skin dregs, fry on low heat until the bottom is transparent and change color, then turn over and fry.
6.
After both sides are fried transparently, add shredded green onions.
7.
Put the dark soy sauce and salt in a small bowl, add two tablespoons of water to mix evenly, pour it into the pot and stir fry.
8.
After the soup is dry, add minced garlic and mix well.
Tips:
1. When frying the dregs, it is best not to put the soy sauce directly into the pot, dilute it with a small amount of water and pour it in evenly, otherwise the color will not be easy to stir.
2. Try not to add water when frying, otherwise the scum will not be burnt enough to taste.
