Stir-fried String Beans
1.
Tear off the old tendons at both ends of the kidney beans, wash and drain, and break into sections with your hands. Garlic smashed. Finely chop dried chili. (Do not add spicy food)
2.
Pour the oil in the hot pan, pour a spoonful of salt (according to the amount of green beans) in the hot pan, shake the pan to melt the salt, the action is fast!
3.
Add garlic to high heat, then pour string beans, stir-fry until slightly wrinkled on both sides, add oyster sauce.
4.
Add dried chilies, continue to stir fry, and pour the cooking wine along the side of the pot. (More tender) Sprinkle some chicken essence before serving, and serve!
Tips:
The hot oil is first added with salt and then stir-fried on high heat. This is to make the kidney bean skin dehydrated and wrinkle quickly, making it easier to fry and taste. Pour a circle of cooking wine when it comes out of the pot, the green beans are more tender. If it is dry stir, there is no need to add cooking wine.
