Last time I went back to my hometown and brought a big bag of string beans! While they are fresh, the green beans are fried in different patterns every day, but the one that best reflects its deliciousness and tenderness is the stir-fry!

Ingredients

1. Tear off the old tendons at both ends of the kidney beans, wash and drain, and break into sections with your hands. Garlic smashed. Finely chop dried chili. (Do not add spicy food)

2. Pour the oil in the hot pan, pour a spoonful of salt (according to the amount of green beans) in the hot pan, shake the pan to melt the salt, the action is fast!

Tips:

The hot oil is first added with salt and then stir-fried on high heat. This is to make the kidney bean skin dehydrated and wrinkle quickly, making it easier to fry and taste. Pour a circle of cooking wine when it comes out of the pot, the green beans are more tender. If it is dry stir, there is no need to add cooking wine.
