Stir-fried Winter Bamboo Shoots with Chicken Sauce

Shell the winter bamboo shoots, cut them, cook them in boiling water, soak them in cold water for half an hour, pick up the dry water, and set aside πππ).

Tips:
1. The bamboo shoots must be hulled and cooked (or the old ones are fast), and then soak them in cold water to keep them fresh. It can be soaked overnight. (Mom said it feels better to eat after soaking, because I donβt know how to describe it in Cantonese. )
2. The bamboo shoots are eaten with oil, and it is also very delicious to stir-fry with lard or pork belly.
