Stir-fried Winter Bamboo Shoots with Sausage
1.
Prepare the ingredients for the winter bamboo shoots processing method: cut the old roots of winter bamboo shoots, cut them in half and slice them into thin slices, boil cold water in a pot and boil for 3-5 minutes (it is almost done, it depends on experience. Stir-fry, so it can be cut off.) Take out cold water and drain for later use (you need to hurry up and carry out this step after the winter bamboo shoots are dug out and shelled, otherwise they will easily get old and can’t hold it. This is convenient for storage. The fresh-keeping layer is kept for a long time, and when you want to eat some fried meat and the like are delicious, very fresh and sweet!)
2.
Add chili and minced garlic in a hot pan and fry until fragrant. Add sausage and fry until the fat becomes transparent.
3.
Pour in winter bamboo shoots and stir-fry evenly, add sugar and stir-fry.
4.
Pour a circle of rice wine (old wine and cooking wine will do) and don't stir it. Let it burn until it tastes out of alcohol and stir fry a few times.
5.
Add appropriate amount of soy sauce and stir fry for color.
6.
Add a little bit of water, cover and simmer for 1 minute on medium and low heat! Open the lid and add a little salt (the sausage is already salty), stir fry over high heat and add chicken essence.
