Stir-fried Yam with Mixed Vegetables

Prepare peppers, carrots and chopped green onions

Soak the fungus in advance, and soak the yam peeled and sliced (add white vinegar in the water to fear that the yam will become black due to oxidation)

Make water in a pot, boil the yam, fungus, hot pepper and carrot to blanch the water. Don't blanch it for a long time, just remove it after blanching.

Tips:
Before peeling the yam, put some vinegar on your hands to avoid itching.
