Stomach Yam Pork Belly Soup, Pork Belly Chicken Soup (including Pork Belly Cleaning Method)

Pork belly soup must taste the same as fat intestines. The key to kung fu is to wash it. The method of washing is the same as that of pig large intestine. The pork belly is bought inside and outside. Put the pork belly in a basin and rinse off the surface dirt. Add flour (without water) and rub the pork belly. Grab, knead, knead, and rub for a long time and then add water to continue scrubbing. After the flour is cleaned, add salt (without water) to continue scrubbing, and wash for 15-20 minutes Rinse with water left and right, then add vinegar to repeat the previous actions (grab, knead, pinch, scrub), scrub for about 15-20 minutes, rinse with water, then add cooking wine (without water) and continue scrubbing for about 15-20 minutes Rinse it with water, then cut the ginger shreds and put it in to rub for about 15-20 minutes. Rinse with clean water until the pork belly is fresh and tasteless, and the water is clear and you are done.

Turn it over and use scissors to remove the fat and oil on it, and then rub it with cooking wine.
