Straw Mushroom Steamed Custard

Beat the eggs into the container and add a pinch of salt.

Pour a little cooking wine and break up.

Prepare a bowl of warm water, slowly pour it into the egg mixture, and beat it evenly.

Put it in a pot of cold water and steam on high heat. Turn to medium heat and continue to steam for 5 minutes to solidify the egg liquid.

During this period, you can use a knife to scrape off the black spots on the roots of the straw mushrooms and wash them off.

Then each straw mushroom has four or six petals.

Add water to the pot and bring to a boil, add the chopped straw mushrooms, blanch for 30 seconds, and remove.

When the egg mixture has solidified, place the straw mushrooms on top of the egg custard and continue to steam for 1 minute.

Pour a little fresh soy sauce and sesame oil in a small bowl and beat evenly.

Before the custard comes out of the pan, just drizzle with a mixture of fresh soy sauce and sesame oil.
Tips:
The custard must be made with warm boiled water, added in the ratio of eggs and warm water 1:1.5, the custard will be tender and smooth.
Straw mushrooms are blanched for easy ripening, and the cooking time can be reduced, which can greatly reduce the loss of nutrients in the cooking process.
