Strawberry Pastry Cake

Put the three ingredients of the meringue together and knead it into a dough. Put the kneaded dough into the freezer compartment of the refrigerator until it is frozen hard;

Use a grater to shred the frozen dough to form a crispy crust;

Add 100g butter, add powdered sugar and salt, and beat until the color is white and the volume becomes larger.

Add the egg liquid in 3 times, stirring each time until the egg and butter are completely integrated before adding the next time;

Combine flour and baking powder, sieve into the butter and stir gently to form a cake batter;

Pour the cake batter into the mold, four-thirds full and it will be 7.8.9.

Spread a layer of chopped strawberries on the cake batter, mix gently with a fork to mix the chopped strawberries and the cake batter;

Sprinkle a thin layer of meringue evenly on the surface;

Put it in a preheated 150℃ oven, put the baking tray on the bottom, and bake for 30 minutes.
Tips:
When making puff pastry, butter does not need to be beaten. After being softened, it is directly mixed with flour and powdered sugar to form a dough. The puff pastry must be frozen hard enough to be made with a grater.
