Sun Fish Ball

Ingredients: 100g squid, 1 egg, 25g broccoli, 20g carrot, 5g cornstarch, egg white water.
PS: The weight of the squid refers to the weight after the head is removed and the internal organs are cleaned~~ Prepare a boiled egg and a little raw egg white in advance, which will be used when making fish balls.

First remove the viscera and head of the squid, then wash it, and finally tear off the squid skin outside.
PS: Removing the outer skin can make the squid balls whiter, otherwise the color of the fish balls will be dingy.

Remove the cartilage of the squid.
PS: The transparent plastic-like thread in the middle of the squid is the squid bone, because it is very hard and cannot be eaten. We must remove it to prevent the baby from choking in the mouth.

Then use a knife to cut the squid into small pieces.
PS: Cut into small pieces and put into the blender to break the ribs of the squid, which is easier to be stirred into fish paste, and it will not damage the blade of the blender.

Stir the squid into fish paste twice.

The stirred fish paste is very delicate, and the fish balls made are too tender!

Separate the egg yolk and egg white in advance, and take 20g of egg white.

Add 3g of starch and egg white to the fish paste.
PS: Don't add egg whites all at once, but add them slowly (stir each time you add a little), so that you can control the total amount of egg whites and don't let the fish paste become too thin. If the fish paste is too thin, there will be no balls or balls! (Here is the key point. The egg white must not be added too much, too much liquid, and the fish paste is too thin, which is the primary reason for the failure of the ball)
Starch is added to increase the viscosity of the fish balls, which makes it easier to shape.
Babies who are allergic to egg whites can add less water in it.

Stir the mashed fish with chopsticks to make the mashed fish fresh.
PS: Regarding the seasoning, Xiaosi’s mother will share with you. The fish balls made from squid are very fresh, so they are delicious without any seasoning. You can try the unseasoned version first~

Cut the hard-boiled egg and remove the yolk.

Crush the egg yolks into egg yolk paste.
PS: Xiaosi's mother felt that the egg yolk was a bit dry and unformed, so I added 1 teaspoon of water and 2g starch to mix it, which made it easier to make the egg yolk into small balls.

Use your hands to roll the egg yolk into a ball.
PS: Take a small piece of egg yolk, place it in the palm of your hand and hold it firmly so that the egg yolks are gathered together, and then constantly correct the egg yolk into a round ball.
Don't be too stressful at this step, just think of a way to make the egg yolk form a small ball.

Take an appropriate amount of fish paste and spread it on your hand, put the egg yolk in the middle of the fish paste, and gently wrap the egg yolk.
PS: You must wash your hands with running water repeatedly before rubbing the fish balls, so that the fish paste will not stick to your hands, so that you can easily rub them into balls.

Gently round the fish balls with your hands.

Boil a pot of boiling water, and when the water boils, add the fish balls and cook the fish balls. (I usually take a meatball and taste it to determine if it is cooked)
PS: After the fish balls have surfaced, cook them for 2 or 3 minutes.
If the fish balls cannot be eaten as a meal, they can be frozen and preserved at this step, and two fish balls can be boiled or steamed each time when making supplementary food.

Next, we are going to prepare the side dishes~ Broccoli is broken into small flowers by hand and blanched in boiling water.
PS: In order to look good, I didn't chop up the vegetables. If it’s for a baby to eat, chop up the broccoli~

Cut the carrots into thin slices with a knife.
PS: If the baby eats it, cut it slightly!

Then in another pot, boil the carrots in boiling water for about 10 minutes in advance.

PS: Although the squid meatballs are so delicious, Xiaosi's mother still recommends that two or three pieces are enough for the baby each time! And there is no more than 1 egg yolk inside, the amount is just right!
Tips:
