Sweet and Sour Bitter Melon Slices

Prepare a bitter gourd.

Cut it in half and take out the flesh.

Cut thin slices.

Marinate with a small amount of salt and white vinegar for five minutes to get rid of some bitterness.

Marinate the bitter gourd for five minutes in cold boiling water, rinse off the bitter gourd juice from the marinade, and re-season.
