Sweet and Sour Flour But Not Greasy
1.
Regarding the making of the big fan, I didn't shoot the process map because I couldn't keep up with the hands and feet. Let's just talk about it briefly.
Soak 300 grams of yam powder in water for half a day. After soaking, pour off the surface water. Put 3 bowls of water in the pot to boil, put a little salt, chopped green onion in the pot, stir the precipitated batter evenly, pour it into the pot and stir continuously with a spatula until it becomes transparent and solidify and then turn off the heat. In some dishes, it is easy to cool. The big fan made on the picture.
2.
Cut the large, cold noodles into small pieces. Don’t cut them too big, as they are hard to taste. You will find that the smaller the pieces, the better.
3.
Put an appropriate amount of oil in the pot, you can cook a little more than usual, and pour the flour
4.
Stir fry until transparent
5.
Mix the dark soy sauce, salt, vinegar, and sugar in a bowl and pour it into the pot
6.
Stir-fry medium and small
7.
Stir-fry until the surface is thin and it is almost done. Cover the pot and let it simmer for a while. The sweet and sour noodles are fried. If you can’t finish it at one time, it’s OK to turn it in the microwave next time. Don’t consider the problem of not adding sugar to diabetics. Diabetics themselves cannot eat starchy foods. Enjoy the sweet and sour.
Tips:
The flour must be soaked a few hours in advance, and it must be cold before cutting, otherwise it will break easily.
