Sweet and Sour Hairtail

Wash the hairtail, use scissors to cut into large sections about 5 cm, slice ginger, mince green onions and set aside

Put two spoons of oil in the pot, when the oil temperature reaches 60% to 70%, put the hairtail in sections, and fry slowly on low heat. After frying, turn over and fry for 2 minutes. Add ginger, cooking wine and light soy sauce , Rock sugar and fry for 1 minute, add boiling water, the water should be just under the hairtail

Simmer on low heat until the soup thickens, add 2 tablespoons of vinegar, stir fry gently, take out the pot after the taste is even, put on a plate and sprinkle with chopped green onion
Tips:
1. When frying octopus, be sure to have a low fire, because high fire is easy to fry;
2. You can use chopsticks when turning it over;
3. When adding water, be sure to pay attention to the amount of water, not too little or too much, just no hairtail;
4. Add vinegar after collecting the juice. In order to make the taste more even, stir fry a little, but it must be gently, otherwise the hairtail will be fried.
