Sweet and Sour Hairtail

The hairtail is cleaned, the head and tail are removed, the black film and internal organs in the belly of the fish are cut, and the size is up to your liking. The other ginger, garlic, onion, pepper and aniseed are prepared.

Make a sweet and sour sauce, put 2 spoons of sugar in a bowl, 3 spoons of Beijing rice vinegar, 2 spoons of Wei Xian soy sauce, 1 spoon of soy sauce, 1 spoon of rice wine, stir well and set aside.

The hairtail does not need to be marinated in advance, and each piece of hairtail is covered with cornstarch or flour.

Tips:
1. There is no need to marinate the octopus in my home. The octopus made according to my method is not fishy at all.
2. It is best to add enough water at one time and do not add water in the middle.
