Fish in China symbolizes stability, joy and prosperity, and people like to use fish to express good wishes. "Fish" also has the homophonic sound of "Yu", which means living abundance every year and having excess wealth and food every year. Therefore, this protagonist is indispensable on our New Year dishes table-fish!

There are many types of fish, but if you say that it has less thorns, it tastes good, it is easy to buy and easy to make, and it is suitable for the whole family. I think of hairtail first!

Hairtail is a marine fish, rich in a variety of mineral elements and vitamins necessary for the human body. Eating hairtail for pregnant women is beneficial to the development of fetal brain tissue; eating more hairtail for children is beneficial to improve intelligence; eating more hairtail for the elderly can delay brain atrophy and prevent Alzheimer's; eating more hairtail for women can make the skin smooth and moisturized and have long black hair.

Hairtail not only has few spines, but the meat is also very tender and elastic. It is delicious fried, stewed or made into sweet and sour flavors. Friends who are already preparing New Year dishes, might as well include "Sweet and Sour Hairtail" on the list of New Year dishes!

Tips:

1. When frying octopus, don't open the fire, otherwise the meat inside will be raw if the skin is battered.
2. The fried octopus is cooked again, the meat is not easy to loose, and the taste is better. It is delicious when made into sweet and sour or braised.
3. How to deal with hairtail: generally we buy frozen hairtail in supermarkets, which can be defrosted indoors. If you are in a hurry, you can put it in warm water below 75°C. There is a layer of white phosphorus on the surface of hairtail, which has a fishy smell but is also rich in nutritional value. Friends who mind can use a small clean brush to brush the edges of the white phosphorus and clean it completely. The hairtail looks better and will not be fishy. The viscera of hairtail should also be rinsed, and the black film is also a source of fishy smell.
