Sweet and Sour Pork

Rub some ginger paste and squeeze out the ginger juice for later use

Remove the fascia of the tenderloin, cut it into even-sized squares, then put two chopsticks underneath, slice it first, then turn 90 degrees and then shred. The original piece of meat is cut into pieces with the shredded meat on the top and the bottom still connected together. Look like

Add salt, white pepper, egg white and ginger juice to the chopped tenderloin and marinate for 15 minutes

Roll the marinated tenderloin in dry starch, then shake off the excess starch on the shredded meat so that each shredded meat is fluffy and evenly coated with starch

Put peanut oil in a small soup pot and turn to medium-low heat when it is 80% hot. Use a colander to quickly fry the tenderloin shredded with starch until the shape is finalized. Then, heat the oil and re-fry again.

In a separate pot, add tomato sauce, sugar and some water to a boil, then add a little bit of water and starch and turn to a low heat until the soup is thicker and the color becomes more red. Turn off the heat.

Put the fried tenderloin into the cooked tomato sauce and roll it, or pour the tomato juice directly on the fried tenderloin, garnish with a bit of cucumber slices, and it is ready to eat
