Sweet and Sour Pork

Prepare ingredients.

The tenderloin is patted loose with a knife and then cut into strips along the lines.

Add salt and pepper.

Put the cooking wine and marinate for a few minutes.

Mix with sweet and sour sauce: sugar, white vinegar, starch, tomato sauce and water, and 1 gram of salt.

Put flour, starch and half an egg in a bowl.

Pour the thick paste into the marinated tenderloin.

After the tenderloin is battered, put it in a 60% hot oil pan and fry it until the skin becomes hard and remove it (about two minutes).

Fished out tenderloin.

When the oil temperature rises to 70%, re-fry until the color is golden and ripe, drain the oil.

Put oil in another pot, add green onion, ginger, and garlic.

Pour the sweet and sour sauce and stir with a spoon.

When the fisheyes are soaked, cook a little bit of hot oil for the fried tenderloin, and lower the tenderloin.
