Sweet and sour pork loin is one of the classic Han dishes. Using tomato sauce instead of the traditional sweet and sour sauce has a brighter color, a more sour and sweet taste, and the most attractive thing is its crispy outside and soft and tender inside. On the first bite, the thick sweet and sour juice wrapped around the coat, crispy and fragrant, and when it was eaten inside, it was discovered that the tender and fragrant tenderloin had been hidden between the lips and teeth, and the taste and mouthfeel fit seamlessly. It's really good.

Sweet and Sour Pork

1. Cut the tenderloin into thin strips, put them in a bowl, add a spoonful of cooking wine, a teaspoon of salt, two spoons of cornstarch, a little white pepper, and about one-third of the egg white

2. Grab well and marinate for 15 minutes

3. Tomato sauce with vinegar, a little sugar

4. Add appropriate amount of water and mix thoroughly. As long as the taste of this tomato sweet and sour sauce is suitable for your home, there is no strict ratio.

5. Pour an appropriate amount of oil into the wok and heat it up. Add the marinated tenderloin strips and fry them over medium heat.

6. Deep-fried and fished out for oil control

7. Boil the oil in the pan again until it smokes. Pour the fried tenderloin back into the oil pan and fry again for another minute to remove. This will make the outside crispy and tender inside.

8. In another pot, pour some oil into the chopped green onion, and fry the minced ginger over low heat to create a fragrance

9. Pour in sweet and sour tomato juice and cook until bubbling

10. Pour in the tenderloin and stir fry, and the soup will thicken and take it out of the pot

11. Sprinkle some white sesame seeds for decoration

Tips:

There is no fixed ratio of sweet and sour sauce, as long as the taste suits you, the tenderloin will be more crispy after being fried twice!
