Sweet and Sour Radish

Wash the radishes with stems and roots

Cut off the head and tail

Cut horizontally into slices, but don’t cut the bottom

And then cut longitudinally into a cross knife

Add 1 teaspoon of salt to cold boiled water

Soak the cut radishes in salt water for 1 hour

Take a small bowl and add 1 spoon of sugar

Add 5ml rice vinegar
9.
Add a little hydration and set aside

Drain the soaked radishes, put them on a plate, drizzle with sweet and sour sauce and serve

The radish leaves have the effects of digesting food, regulating qi, resolving phlegm, relieving cough, clearing the lungs and throat, removing blood stasis and reducing swelling. So don't throw it away. The dipping sauce can be eaten raw.
Tips:
1. The radishes are soaked in salt water and do not need to add salt to taste.
2. I use 9 degree rice vinegar, which is more acidic, so just add a little bit is enough. If the rice vinegar is relatively low, add it 1:1 with sugar.
