Sydney White Fungus Soup

Soak the white fungus one night in advance.
2.
Wash and chop the soaked white fungus, peel and dice Sydney.
3.
Fill the casserole with two-thirds of the water, add the white fungus and snow pear, bring to a boil on high heat, turn to low heat and boil for one hour.
4.
Add rock sugar, red dates and boil for 10 minutes.
5.
Turn off the heat when the soup thickens.
