1. Cut the pork belly into slender strips about one centimeter, and fry them in a frying pan until golden brown. Add green onion, ginger, garlic and stir fry, add the crispy onion! (You can buy ready-made oil onion crisps, or you can make them yourself and deep-fry them with shallots!)

2. Add soy sauce cream, rock sugar, marinated ingredients, and boiled water to cover the pork belly. Put in the boiled eggs and add the soy sauce star anise! The taste is heavy, you can add a little salt, because the fried shallots are crispy with salt, so I did not add it here.

3. Pour into a casserole, turn to a low heat and simmer for about 1:30 hours, stirring with a spoon in the middle to avoid sticking to the pot.
