Hello everyone~ I am Meat Chef! Today I introduce a very good meal-Huamei trotters. If it is rich, the plum flavor penetrates the pig's feet full of collagen. It is really refreshing after one bite, and it is perfect with a bowl of rice~~! ! Hope you all like it! ! !

1. Ingredients: 500 grams of trotters, 6-10 pieces of plum, 1 piece of ginger, 15 grams of sugar, 20 grams of cooking wine, 5 grams of oyster sauce, 3 grams of soy sauce.

2. First wash the plum and soak in water for 1 hour. Then pour it into a pot over medium-low heat and bring to a boil, then turn off the heat and let it cool.

3. Then cut the ginger into thin slices and set aside.

4. Clean the fine hairs on the trotters, wash them, and cut them into pieces. Then, clean the pot, add the trotters and ginger slices in cold water and cook until the water boils (to remove the trotters blood water).

5. Boil until the water is frothy, remove it, rinse with warm water, and drain the water. Then soak the trotters in the plum water just now, and put them in the refrigerator overnight. Through this process, the taste of plum can completely penetrate into the trotters, and then frozen in the refrigerator, so that the skin and meat of the trotters are more refreshing and taste better.

6. The next day, clean the pot and add oil and sugar. Stir-fry over low heat until caramel color.

7. Separately remove yesterday’s trotters and stir-fry evenly in a pot.

8. After stirring evenly, add the plum, soaked plum water, ginger slices, and cooking wine and continue to stir fry.

9. Add oyster sauce.

10. Stir-fry evenly, add appropriate amount of hot water and simmer. Turn to low heat and simmer for about 60-90 minutes.

11. After cooking, add some dark soy sauce and toning. Turn on high heat to collect the juice until it is thick.

12. It's ready to serve~~, the plum trotters are finally out of the pot if they are creamy, soft, sweet and sour! ! Try it too! !

Tips:

The trotters need to be marinated overnight and kept in the refrigerator. Be sure to collect the juice when you cook it at the end.
