Teriyaki Cod
1.
After the cod is thawed, wash it and use a kitchen paper towel to absorb the water
2.
Put some cooking wine, ginger slices, green onion knot and marinate for a while
3.
Let’s make teriyaki sauce first: prepare mirin, white wine, Japanese soy sauce, honey
4.
Take a small pot, add 100ml of soy sauce, 100ml of mirin, white wine, and 50g of honey. Boil over low heat.
5.
Boil until the sauce thickens about half the amount it started, then turn off the teriyaki sauce and finish it
6.
The marinated cod is squeezed out of water and coated with starch
7.
Add a small amount of olive oil to the pan and add the cod
8.
Fry until golden brown on both sides
9.
Add teriyaki sauce
10.
Add some water to boil and turn to low heat
11.
Pour the sauce on the cod until the juice thickens
12.
Sprinkle some cooked white sesame seeds and chopped green onion
Tips:
When the cod is boiled, try to turn it as little as possible to prevent it from breaking. My house uses rum if there is no white wine. In fact, sake is best! Soy sauce I used sushi soy sauce!
