Thai Beef Curry Soup

For soup powder, it is best to use fine rice noodles; beef soup can be replaced with any stock or stock powder; bean sprouts are best with mung bean sprouts.

Put oil in the pot and sauté the minced garlic.

Add the red curry paste and fry for half a minute. (The amount of curry paste depends on personal taste, red curry paste is the most spicy of all curry pastes).

Add water, add beef broth and curry powder, and boil on high heat.

While cooking the soup, start a separate pot, cook the rice noodles, add two eggs and cook together.

Add bean sprouts, deep-fried tofu, and boil.

Add shrimp and beef, cook, and season with salt.

Add coconut milk and boil.

Water the rice noodles, drain the water, and put them in a bowl.

Pour the soup and add the fish sauce.

Sprinkle with fried shallots and chopped chives, put eggs on, and finish.
