The Key to Making Pastries-lard

Clean the lard and cut into small cubes.

It's best to cut a little bit, so that the oil will get out easily.

Put the lard into the cleaned pot, add a small bowl of water, and start to simmer on medium heat.

Turn the pot a few times with a spatula and the water in the pot will evaporate continuously.

When the water in the pot evaporates, add a small spoonful of salt when the oil gradually starts to boil over a low fire (must be a low fire).

Be sure to flip it a bit more, and turn off the heat when the volume of the oil residue becomes small and becomes golden yellow floating on the oil.

The boiled oil is clear and transparent.

Filter out the oil residue in the pot. Let the oil settle for a while.

Pour the oil into a container, seal it and store it in the refrigerator.

Add a small bowl of water to the pot to make the lard color whiter and more beautiful. Adding a teaspoon of salt is to prevent the oil from splashing out and scalding during the boiling process.
