The Plain Version of "the Crab"

Prepare 3 eggs and 1 salted duck egg,

Ginger juice: grated ginger + salt + cooking wine + sugar + warm water + white vinegar,

Separate the white and egg yolk, mix the egg yolk with the salted egg yolk,

Egg white + pure milk (1:0.5), add a spoon of salt and mix well,

Twist the salted egg whites,

Mix well with the egg white liquid,
7.
A spoonful of oil in a non-stick pan, pour the protein liquid,

Scatter the egg white liquid and fry until half cooked,

Pour the egg whites over water and pour it into the pot again,

Pour half of the ginger juice, stir-fry and serve,

Start the pot with less oil, pour in the egg yolk,

Pour the other half of ginger juice,

Mix well, stir-fry and serve. Cover the egg whites.
