Hope you all like this Thai chicken curry that is generous and full of Southeast Asian characteristics🍛!

This is a recipe for me to take a language class in Edinburgh, play and live with my Thai classmates. The taste is stronger than Japanese curry, which is very close to the taste of traditional Thai family.

I adjusted the recipe slightly, it’s not too spicy, I hope everyone likes it💕

5. Add 100ml boiling water and 100ml coconut milk. The ratio is 1:1. If you like a strong flavor, you can increase the amount of coconut milk. I suggest everyone 1:1. The water is almost submerged in the dish, put 3 small cubes of curry. Turn to low heat and cover the lid.

6. Added coconut milk, and potatoes in the vegetables. The soup quickly became thick. Be careful not to mash the pot. Low heat and stir well.

Tips:

* Coconut milk is the soul and must not be omitted. Any brand is fine. I used this 👆 but it is definitely not Coconut Juice. Coconut milk is different from coconut milk~ The taste and composition are different. One is the raw material and the other is the drink.

* Potatoes are more expensive and can be cut into smaller pieces.

* All the ingredients do not need to be fried completely, and coconut milk should be added to stew in the later stage, which will be more tender after blanching.

* It is recommended to use chicken thigh meat, the taste is very, very good!

* Chopped parsley and basil leaves are traditional collocations. I hope you have to try it if you have the conditions. I love it to death~ (I like it very much, my mother thinks "the taste is great" no matter what. We respect the tradition.

* Any brand of curry is generally fine. Both powder and lumps are fine. If you can’t eat spicy food, the domestically produced and Japanese ones are slightly less spicy (they will also be marked with the spiciness level. The Indian and Thai ones will be richer~
