The Supreme Realm of Wild Tomatoes-tomato Red Sauce

Cross the tomato head and tail lightly with a knife.

The tomatoes are blanched in a boiling water enamel pot until the skins are peeled, then rinsed in cold water and peeled off the tomato skins.

Cut the tomato into small pieces and set aside.

Heat oil over medium heat, saute diced onion and minced garlic until fragrant.

Add all the tomato cubes, bay leaves and thyme, and heat to a boil over medium heat.
