The Waffles are Sweet and Soft Like This, I Don’t Want to Eat Them Anymore and Buy Them Outside.
1.
Prepare the ingredients
2.
Put milk and eggs, salt and sugar on both sides of the container, then pour in low-gluten flour, butter and yeast powder and knead it into a strong glove film
3.
Put the dough in a bowl, cover it with plastic wrap, and leave it in a warm and humid place to ferment twice as large
4.
Take out the fermented dough, pour it on the chopping board and pat the air with both hands. Divide it into 10 small doughs, roll the round lid and relax the fresh-keeping film for 15 minutes (Note: The slack is to allow the dough to stretch, which helps the back to be easily shaped)
5.
Divide the lotus seed paste filling into 10 pieces, roll round, cover with plastic wrap and set aside for later use (note: cover with plastic wrap to prevent air-drying)
6.
Take a small loose dough, flatten it with the palm of your hand and wrap it in the lotus paste filling
7.
Tighten the mouth like a bun, then round it, put it on a baking tray with the smooth side up, put it in a fermentation tank or oven and put it in a bowl of warm water to ferment 1.5 times its size
8.
Preheat the waffle for about 3 minutes, brush the upper and lower molds with a thin layer of oil, and put in the dough covered with fillings
9.
Cover and bake for about 2~3 minutes
10.
Open the cover to see the color inside, and see if the color is similar to the picture. Take it out with a food clip or chopsticks, and be careful of burning your hands.
Tips:
1. Do not add the liquid to the flour all at once, set aside 10 grams, if you think the dough is a bit dry, add it slowly
2. The water absorption of each type of flour is different, add or reduce appropriately according to your own flour water volume
3. The temperature of each machine is different. According to your own machine and your preference for coloring, it is suitable
