Three Cup Chicken with Less Oil

Half a local chicken, chopped into small pieces

Pour the chicken pieces into a pot of cold water and blanch

While boiling the water, slice the fat, prepare beer and soy sauce

After the water is boiled, remove the scum, remove the chicken nuggets, pass cold water, and drain off

Put the pork fat slices into the pan, and fry the fat on low heat.

Sprinkle in shredded ginger and stir fry for a fragrant flavor, pour in the chicken pieces, stir fry over high heat until the skin is tightened

Pour in beer and stir fry a few times

Tips:
1. The conventional three-cup chicken is a cup of oil, a cup of wine, and a cup of light soy sauce. For the sake of health, I reduced the oil to a minimum and replaced the oil with pork fat. The fried pieces were more fragrant and more beautiful in color.
2. Stir-fry chicken nuggets until golden brown, then add beer and simmer, the taste is better, if you replace the beer with white wine, it will taste more delicious.
3. Add the soy sauce at the end to make the color more delicious. Decide whether to add salt or not according to the taste of your family.
